Bannock Apple Fritters

Bannock Apple Fritters
Ingredients
• 2 apples.
• 1/4 tsp cinnamon.
• 1/4 cup brown sugar.
• Bannock dough*.
• 2 tbsp powdered icing sugar.
• Cooking oil.
The Evening Before
Peel, core, and cut the apples into 1/4" cubes and place in a resealable container.
Add brown sugar and cinnamon to the apples, mix well, seal and place it in the fridge.
The sugar will dissolve and form a caramel like sauce by morning.
Prepare Bannock dough*, then place in a plastic bag, and put it into the fridge. Ensure the dough is well dusted with flour before placing it in the bag.
Cooking Instructions
Break off palm sized pieces of the Bannock dough and flattened them to about 1/4" thickness.
Put about a tablespoon of the apple mixture into the center, leaving as much of the caramel sauce in the container as possible, and form the dough around it until well-sealed, so that none of the apple mixture is exposed.
Heat the pan over a low to medium flame, adding enough oil to achieve a 3" depth in the pan. Place the fritters into the hot oil, and fry on low to medium heat to allow the centers to fully cook - roughly 5 minutes.
When cooked through and golden brown in colour, remove from the oil and allow to drain, then sprinkle the fritters with powdered sugar, and drizzle the tops with the caramel sauce.
Serve immediately.
These go down nicely with a steaming hot cup of either campfire coffee, or Black Spruce and Potentilla Tea.

*Bannock #1
• 3 cups all-purpose flour
• 2 tbsp baking powder
• 1 tsp salt
• 1/3 cup lard
• 1 cup milk or water
Stir together flour, baking powder, and salt in a large bowl.
Cut in 1/3 cup of lard
Create a well in mixed ingredients and pour milk or water into the middle.
Mix then knead together, and form into a ball.
*Bannock #2
This recipe is very similar to #1, but utilizes butter rather than lard.
• 3 cups all-purpose flour
• 2 tablespoons baking powder
• 1 teaspoon salt
• 1 ½ cups water
• ¼ cup butter, melted
Stir together flour, baking powder, and salt in a large bowl.
Pour water and melted butter over flour mixture. Stir with a fork to make a ball.
Turn dough out onto a lightly floured surface; knead gently about 10 times.
